Kelewele (Spiced Fried Plantain)
Ingredients
- 4 Ripe plantains
- 2 inch piece, grated Fresh ginger
- 1, minced Scotch bonnet pepper
- 1/4 tsp Ground cloves
- 1/2 tsp Salt
- for frying Vegetable oil

Peel and cut plantains into 1-inch cubes.

Mix grated ginger, minced scotch bonnet, ground cloves, and salt in a bowl.

Add plantain cubes to the spice mix. Toss gently to coat all pieces.

Let marinate for 10-15 minutes (longer = more flavor).

Heat oil in a deep pan to 170C/340F.

Fry plantain in batches until golden brown on all sides, about 3-4 minutes per batch.

Drain on paper towels. Serve hot with groundnuts on the side.
Kelewele is Ghana's most popular street food — ripe plantain cubed and fried with a spicy ginger-chili coating. Crunchy outside, sweet and soft inside. Perfect as a snack or side dish.
Choosing the Right Plantain
Use ripe plantains with yellow-black skin. They should be soft but not mushy. Green plantains won't have the sweetness needed for kelewele.
