What Makes Ghanaian Jollof Special?

Ghanaian jollof stands apart with its smoky, slightly charred base — what we lovingly call "the bottom pot" or kanzo. This isn't a mistake; it's the signature. The rice is cooked entirely in a rich tomato base with aromatic spices until each grain absorbs every bit of flavor.

The Essential Ingredients

  • Basmati or jasmine rice — long grain is key
  • Fresh tomatoes and tomato paste — the flavor foundation
  • Scotch bonnet pepper — for that authentic heat
  • Onions, garlic, and ginger — the holy trinity
